Rock Buns

Cooking time 10-12mins Quantity 10-12 cakes

8oz self raising flour

1/2 teaspoon mixed spice if desired

2oz margarine or cooking fat or dripping

2oz sugar

2 oz mixed dried fruit chopped if required

1 egg or 1 reconstituted dried egg

milk or milk/water mixed

2 teaspoons sugar for topping

Method: Sift the flour and spice. Rub in the margarine fat or dripping: add the sugar, dried fruit and egg. Gradually add enough water and milk, or milk, to make a sticky consistency. Put spoonfuls on to one or two greased baking sheets. Sprinkle with sugar and bake in a hot to very hot oven for 10-12mins.

Variation: Jam Buns: Omit the dried fruit in the Rock Buns. Put the plain mixture on the baking trays. Make a dip in the centre of each cake with a floured finger and put in a little jam. Bake as above.
